I get so much inspiration from what my friends are eating when I'm in a food rut. I was in a major one last week, but I think I've turned the corner. Usually when I'm in a food rut, I'll do a week or two of Hello Fresh, but my friend shared with me two of her recent favorite Hello Fresh meals so I'm all set for next week. Before I get to this week's plan, here are some recent eats...
Last week we ate Skinny Chicken Enchiladas (pictured above) with a black bean salad several nights. At one point I used a recipe for the salad, but now I just make it by memory. I combine black beans, halved cherry tomatoes, diced red and green peppers, and diced onion. I then toss in a vinaigrette made from rice wine vinegar, lime juice, olive oil, salt, pepper, and cilantro. Sorry I don't have any measurements for you! You can also mix this with white rice and it's amazing, but I was trying to make it on the lighter side.
I made these Trader Joe's mini wontons with roasted broccoli for dinner one night and it was pretty good. There's a recipe on the back of the bag for dipping sauce (soy sauce + rice wine vinegar + water). They are nice to have on hand if you need to throw something together last minute. Unfortunately, Darby won't eat them because they have "salad" in them in the form of microscopic pieces of cilantro she spotted.
I made a batch of curried chicken salad recently and it was super yummy. A nice change-up from my normal lunch turkey wrap. I cannot find the recipe I used, but this one is very similar sans the chutney and nuts. Here's what we're having for dinner this week:
Traditional Seafood Paella - Mark said he wanted paella this week, so I'm going to give this recipe a try. Hopefully, we'll get some leftovers out of it.
Yogurt-Marinated Chicken with Rice Pilaf, Roasted Zucchini & Cilantro - I actually had this Hello Fresh meal at a friend's house last week and I loved it so much I wanted to recreate it. If you've ever been to Sticks, it reminds me a little of eating there.
Pan-Roasted Chicken with Dijon Mustard Sauce and Israeli Couscous - Haven't had this yet, but excited to try it. I will make it with roasted broccoli instead of the arugula salad because I have a huge bag of broccoli from Costco I need to finish using up. And, Darby will not be eating an arugula salad anytime soon.
