I'm not hosting Thanksgiving this year, so I'm not going to have a bunch of leftovers and I need to have a plan for the other dinners of the week. I do get to bring a few sides to Thanksgiving, so stay tuned for those. I'm trying out a few new recipes I've never made before but they come highly recommended, so I think it will turn out well.
Lasagna Soup - I've actually thought of making this so many times, but I didn't think Mark would like it so I've passed. However, my girlfriend just made it and she said it was amazing, so I'm going to give it a shot.
Butternut Squash Black Bean Enchiladas - We are hosting a friend for dinner who is vegan, so I'm going to make these enchiladas. I've made squash enchiladas before and they were amazing, so I hope these will be just as good. We're also having Fiesta Bean Salad and Pioneer Woman Salsa with guacamole and chips. I made the enchilada sauce and salsa on Sunday afternoon to make the day of much easier. On a side note, I firmly believe enchilada sauce and salsa should always be homemade, if possible. They just taste so much better.
Pan-Seared Bone-In Pork Chops + Brussel Sprouts Gratin - I heard these Brussel sprouts are amazing, and I'm planning on bringing them to Thanksgiving. I thought I should practice a few days before, so I picked up some bone-in pork chops to serve with them tonight. I love Brussel sprouts, but I'm still working on the others in the family. I think the cheese will do the trick.
Classic Sweet Potato Casserole - First of all, this dish looks so yummy. I love the way the marshmallows are arranged - you eat first with your eyes, right? I've also heard from several people that this dish is outstanding, so I'm excited to give it a try. I don't think you can't go wrong with Southern Living recipes.
Totally random, but Nicholas Nickleby is free On Demand right now. If you like Dickens and/or period pieces, you will enjoy. Anne Hathaway is in it, and the lead is super cute. (I am quite the connoisseur of the free OnDemand movies - I'll keep you posted an any other gems I find.)
