At least one night each weekend we usually get together with friends for dinner. Saturday night I was in charge of bringing an appetizer. Thanks to Pinterest, there was no shortgage of options. I narrowed it down to a few I thought were kid-friendly and not too filling. I've ruined my appetite for dinner more than once on a good appetizer. I ended up deciding on the Bruschetta with Roasted Marinated Red Peppers. I put all of the ingredients on a large platter and let everyone serve themselves. I also added some blue cheese with a pear spread, port wine cheese, some prosciutto, black olives, sweet and tangy pickles, pickled okra, and an assortment of crackers and toasted French bread. Lots of options as there were eight adults and five kids.
The marinated red peppers turned out to be amazing. The next day I topped a plain ol' chicken breast with them to liven it up and it was outstanding. I highly recommend making marinated red peppers yourself as the ones out of a jar just aren't the same.
