Work has been crazy the past few weeks and I've been guilty of eating out way more than I should. I finally had time to make it to the grocery store this weekend and do some meal prepping. My body was craving fruits and vegetables, and I decided to make one of my favorites: Bethenny's Pureed Zucchini Soup. (And maybe the season premier of RHONY put Bethenny on my mind.)
I think I used a little more butternut squash than the recipe called for which is why my soup isn't as green as hers, but it still tasted wonderful. I also used coconut milk from a leftover Hello Fresh recipe since I didn't have soy milk on hand. I think the soup would also be fine with regular milk or even if you omitted milk altogether. Just don't leave out the lemon juice. That's what makes this soup.
