I created this cauliflower rice bowl last week and all of my friends have been asking for the recipe. It would have been great with the addition of grilled chicken and veggies as well, but it was the end of the week and I was all out of produce. I did have a can of Rotel and some Trader Joe's cauliflower rice, so I found this recipe online to use as an inspiration. You could also top with salsa, avocado, cilantro, corn, or lime juice. Just be creative and use what you like and have on-hand!
- Frozen cauliflower rice
- Can of Rotel
- Small onion, chopped
- Coconut oil spray
- Shredded Mexican cheese
- Black beans
- Jalapeño peppers
- 1/4 teaspoon chili power
- 1/4 teaspoon cumin
- Sauté frozen cauliflower rice until no longer frozen and an excess water is gone.
- Move the rice to one side of the frying pan, add coconut oil spray to the pan, and sauté the onion on the empty side of the pan until soft.
- Add can of Rotel (liquid drained), cumin, and chili powder. Combine all ingredients and sauté for 3-5 minutes.
- Serve in a bowl topped with black beans, jalapeño peppers, cheese, and siracha. I microwaved for an additional 30 seconds to melt the cheese.
